Berry Blast Chiller Ice Cream

Here’s a super simple recipe that my wife and I came up with to serve as a more natural delicious ice-cold creamy treat. Note you will need a decent blender or hand-emulsion blender for this recipe.

This recipe will make 2-4 servings depending on how hungry you are. My wife and I are gluttons, so it is usually only two servings for us. If you are vegan or avoiding dairy, it should still taste pretty good if you substitute the heavy cream. I’ve substituted the heavy cream with Greek yoghurt and though not as creamy, it was still very tasty.

Ingredients

  • 2 Cups Frozen Blueberries
  • 1 Cup Frozen Strawberries
  • 1 Cup Heavy Whipping Cream
  • 1 Tbsp. Cocoa Powder
  • 3 packets sweetener (or whatever you prefer)

Directions

  • Place all ingredients into blending apparatus (We use a Vitamix)
  • Blend to all hell until ingredients are well incorporated and smooth

Awesome Garlic Cauliflower Mash

For those foregoing a lot of starch in their diet but missing some mashed potatoes, I have the recipe for you!

Awesome Garlic Cauliflower Mash

My wife and I make this and use it as a side dish or as part of the meal (such as lower-carb Sheppard’s pie). These are pretty easy to make (I make them after-all) and taste pretty great. My in-laws thought they tasted exactly like mashed potatoes. I think they do as well.

Ingredients

  • 1 Medium/Large head Cauliflower
  • 3/4 Cup Cream Cheese
  • 3/4 Cup Shredded Cheese
  • 3.5 Tbsp Butter
  • 1 Tbsp Minced Garlic
  • Salt & Pepper to taste

Directions

  • Prep Cauliflower (take off stem and break into chunks… florets)
  • Bring pot of water to a boil and place in cauliflower florets
  • Let boil for ~6 minutes or until fork tender (It is almost always 6 minutes for me)
  • While cauliflower is boiling, add other ingredients to a large bowl (minus salt and pepper).
  • Drain Cauliflower and pat dry (typically lay some paper towels on counter, place cauliflower and then pat dry with more paper towels)
  • Place in bowl with the other ingredients and mix with hand mixer, hand emulsion blender
    • If you have a Vitamix you can mix everything with variable speed 3-4.
  • Mix until desired consistency and add salt and pepper to taste.

Bill’s Breakfast Smoothie – Fats, Carbs and Protein,, Oh my!

I’ve been drinking a green smoothie most mornings for the past two years. Over time I have turned the once simple “Green Smoothie” recipe into my own concoction. Recently, my wife surprised me with a Vitamix 5200 and this transition has resulted in my NutriBullet becoming neglected for Smoothies. Nothing wrong with a NutriBullet though, I would highly recommend it for anyone looking to make smoothies, especially on a budget.

Ingredients

  • 1 large handful of Kale (Organic preferably)
  • 1 quarter Avocado
  • 1-2 hardboiled Eggs
  • 4-5 Whole Strawberries (Can be frozen or fresh)
  • 1 cup Frozen Berries (I use Frozen Mixed Berries w/ Blueberry, Blackberry and Raspberry) slightly thawed
  • .5 Tbsp Coconut Oil
  • 1 heaping Tbsp Chia Seeds
  • 1 heaping Tbsp Golden Flax Seed Meal
  • Small handful of Raw Almonds (8-10)
  • Small handful of Walnuts (8-10)
  • You may wish to add 1/2 scoop protein powder if you are trying to go higher protein
  • Water

Directions

  • Put all ingredients into blender or “nutrient extractor” mechanism. LOL.
  • Add Water as needed.
    • Nutribullet – I typically go past the Max line with the water as I mash the fruit and make a indentation for my add-ons.
    • Vitamix – I just throw all ingredients in and add water to the 20oz line. I don’t like it to too thick!
  • Blend, Extract, or Liquify the hell out of the ingredients.
